Lodge 12” Skillet — When the 10.25” Isn’t Big Enough
The 10.25” Lodge handles 2 chicken thighs, 1 steak, or a 2-serving frittata comfortably. The 12” handles 4 chicken thighs, 2 steaks, or a 4-serving cornbread without crowding proteins. Crowded proteins steam rather than sear — for anything above 2 servings, the larger pan matters.
Weight reality
The 12” weighs 8 lbs, compared to 5 lbs for the 10.25”. This is meaningful when maneuvering a full pan one-handed. For cooks with wrist or shoulder issues, the 10.25” is more practical for daily use. Reserve the 12” for batch cooking and weekend use.
Stovetop coverage
The 12” requires a 10”+ burner for even heating. On a standard household burner (8–9”), a 12” skillet heats the center faster than the perimeter. Use low heat for a longer preheat to equalize, or finish in the oven where radiant heat reaches the edges.
When to choose the 12”
Families of 3–4 cooking proteins, shallow frying (more headroom prevents oil splatter reaching the edge), and whole-skillet baked goods (larger cornbread, shakshuka for 4).
